Marinated BBQ Prawns & Scallops

Fresh Australian seafood inspired by Asian flavours.

Ingredients – (Serves 4)

  • 24 green shelled and deveined prawn tails
  • 8 scallops, shelled
  • 1/2 cup coconut cream
  • handful coriander, chopped

MARINADE

  • 1 tablespoon chopped ginger
  • 5 garlic cloves, chopped
  • 1 lemongrass stalk, chopped
  • 1-2 red chillies, deseeded and chopped (or minced chilli)
  • 1 lime,zest-save juice
  • 5 coriander stalks, chopped
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce

Method:

  1. Place all marinade ingredients into a food processor. Blend until they form a paste. Place mixture in a bowl and toss with the seafood to coat. Cover and place in the fridge to marinate-as long as possible.
  2. Preheat BBQ on medium-high and sprinkle/spray with a little oil. Remove seafood from the marinade (keeping the marinade) and cook the prawns on BBQ for 2 minutes each side or until cooked through. Scallops will only need about 1 minute each side.
  3. To make the dipping sauce, place the remainder marinade and the coconut cream in a pan over medium heat and cook until slightly thickened.
  4. Serve the seafood sprinkled with coriander leaves, a squeeze of lime and the dipping sauce.
